Salut from France, amis! What a great occasion to check in with you from here. Before I left, I did a full sweep of the fridge and pantry and turned everything that had to go into this week’s Feed Her Needs lineup. A few unexpected bangers came out of it (THE cake and the sardine salad!!)
Feed Her Needs is my meal prep series built around the nutrients women are most likely to run low on. We’re talking iron, magnesium, calcium, folate, omega-3s etc. And of course the important balance of macronutrients.
This week, leftover stone fruit became this moist plum, walnut, and olive oil upside down cake for magnesium . The end of a honeydew, some corn, and edamame turned into a salad with feta and pistachios for calcium and folate. A tin of sardines I kept putting off using became a creamy “tuna” salad with spring onions, dates, and black sesame for omega-3s (you will never want to eat sardines any other way) & a gut-loving cranberry lime fiber jelly from odds and ends in the freezer, and a warm potato, green bean, and lentil salad with preserved lemon dressing for iron, built entirely from what needed eating before I left.
